Homemade Hot Chocolate
• 3 ounces bittersweet chocolate, chopped
• 2 tablespoons unsweetened cocoa powder
• 2 tablespoons sugar, or to taste
• 1 tsp almond extract
• 2 cups milk
• 1 tsp cinnamon
• 1 tsp vanilla extract
• Marshmallows or whipped cream, optional
In a medium pot, whisk together chocolate, cocoa and sugar. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk. Then add cinnamon, almond and vanilla extract. Bring to a simmer.
Remove pot from heat. Cover pot tightly and steep. Warm over low heat before serving hot, with marshmallows or whipped cream if desired.
Milk and Whipped Cream can be substituted with Coconut or Almond Milk. Whipped Cream can be made from the cream off the top of Coconut Milk after it separates.
