Sweet Potato Pancakes (Vegan)

1 ¼ cup of Coconut Milk
1 cup of Flour
1 roasted Sweet Potato
2 tbsps Coconut Oil
2 tbsps Sugar
I tbsp White Vinegar
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
1/2 tsp Allspice
½ tsp Nutmeg
½ tsp Ginger Powder (optional)


Tip: For non-Vegan Replacements

Dairy Milk       | Coconut Milk
2 Eggs               |  White Vinegar and Baking Soda
Melted Butter | Coconut Oil


Combine all dry ingredients in a medium sized mixing bowl. In this same bowl add oil, vinegar and coconut milk then mix until all ingredients become a well incorporated batter. Place a peeled roasted sweet potato a separate bowl and mash with a fork until smooth. Fold mashed sweet potato into pancake batter. Lightly pan spray a skillet and warm to medium heat. Add 1/4 cup scoops at a time. Cook on one side until small bobbles come through and then flip. Cook for 2 to 3 additional minutes the remove from heat. 
Makes about 8 pancakes.  Enjoy
